A coffee quality lab that fits in a carry-on
Green coffee has always been judged by four factors: moisture content, density, water activity and colour. Until now, measuring all four required the purchase of separate instruments costing several times the price of the Omix Plus or forgoing measurements entirely and hoping the batch would perform well. The DiFluid Omix Plus combines optical, electromagnetic and algorithmic sensor models in a single touchscreen device, delivering each reading in seconds with the press of a button.
Everything travels in a foam-padded hard-shell case, meaning the same device that grades samples in your lab on Monday could be at the origin site by Friday. Data is stored locally on the device and syncs to CoffeeOS, where every roast is connected back to the green lot it came from. This includes information such as moisture at intake, water activity in storage and Agtron colour out of the roaster, all in one record.
Lab-grade water activity in under 30 seconds
The Omix Plus uses the chilled-mirror dew point method to measure water activity — the only internationally recognised technique for accurate Aw testing and one that was previously thought impossible to incorporate into such a small device. Inside a sealed chamber, a mirror is cooled until condensation forms. The temperature at which this occurs is the dew point, which corresponds directly to the sample's water activity.
The result is laboratory-grade readings of 0.2–1 Aw with an accuracy of ±0.005, delivered in under 30 seconds. Traditional chilled-mirror instruments take several minutes per sample and cost several times as much. The importance of this lies in the fact that water activity predicts microbial risk, storage stability and flavour fade more accurately than moisture content alone. For importers and roasters, this means identifying mould risk and identifying lots that are deteriorating before they incur financial losses — rather than waiting for issues to be flagged at the cupping table.
True density, not just bulk density
Standard density meters report the bulk density of beans and the air between them. This changes depending on the shape of the beans and how the sample settles. The Omix Plus uses optical algorithms to detect the gap rate between beans and then applies a compensation model that replicates the laboratory displacement method. The result is an estimated true density with minimal error, which is reported alongside the bulk density. This allows you to compare lots, predict roast behaviour, and set charge temperatures based on a figure that actually reflects the beans, rather than the air around them.
Roast color analysis — the Plus difference
The Omix Plus is distinguished from the standard Omix by its roast colour module. Near-infrared (NIR) imaging can read the Agtron-scale roast level of whole beans (a ~18–20 g sample) and grounds (a ~3–5 g sample) with ±0.1 precision, and displays the full colour distribution behind the average rather than just a single mean value. The histogram reveals uneven development, scorching and roast defects instead of hiding them inside one number. Whole-bean versus ground readings also enable you to identify the development gap between the inside and outside that a surface-only colour meter misses.
Point, press, measure — for any sample
AI-driven sample recognition automatically identifies green beans, parchment, dried cherries, roasted whole beans, and ground coffee. The correct algorithm model is then loaded — there is no need to search through the menu for different sample types. The detachable inner tank sampler can be swapped in seconds and a dedicated calibration tank containing the included calibration solutions ensures the device remains accurate over time.
The sample requirements are practical for real-world QC purposes: about 150 g covers moisture, density, screen size and water activity in one run. Roast colour requires just 18–20 g of whole beans or 3–5 g of grounds. Quick auto-calibration means the device is ready when you are, whether you are using it in a laboratory or at the back of a pickup truck at a washing station.
Built into the CoffeeOS ecosystem
Every reading is synchronised via Bluetooth or Wi-Fi to CoffeeOS (the DiFluid Café app), where lots, roasts and cup scores are stored in a single, searchable database. Free over-the-air firmware updates add new features long after purchase — DiFluid devices are designed to improve over time. SDK support enables laboratories and larger operations to integrate the Omix Plus into their own quality control software. The device also works fully offline: collect data at the farm or washing station and upload it when you are back online.

DiFluid Omix vs Omix Plus — which one do you need?
The standard Omix covers all pre-roast metrics, including moisture, density, water activity, screen size, expansion rate, and ambient readings. The Omix Plus also includes an Agtron roast colour module for whole beans and grounds, providing a full distribution analysis.
If you only grade green coffee, the standard Omix is sufficient. However, if you also roast coffee or perform quality control on roasted coffee, the Omix Plus is the better option as it provides a complete solution for green coffee grading and roasted coffee colour analysis in one device. If you also require analysis of grind particle size, pair either model with the DiFluid Omni, which adds a 100–2500 µm particle distribution to the toolkit.
